Entree Selections

Roast New Zealand Rack of Lamb
Marinated with stone ground mustard and molasses. Accompanied by roasted pepper potato pavé and artichoke purée. Accented with rosemary oil and veal glace.

Grilled Polenta and Roasted Portobello
Enhanced with sweet pepper coulis, red lentil ragoût and basil oil.

Marinated Center Cut Strip Loin  - Market
Accented with caramelized shallot demi glace and Worcestershire butter. Incorporated with smoked cheddar potato gratin and brandied baby carrots.

Roasted Salmon
Garlic and herb marinated salmon accompanied by grilled polenta, mushroom ragoût and sautéed spinach. Laced with basil oil, golden beet coulis and balsamic reduction.

Apricot Chicken
Frenched chicken breast stuffed with fresh basil, dried currants and apricots. Sided by glazed baby carrots and minted couscous, drizzled with apricot beurre blanc and gingery red beet coulis.

Mozzarella Stuffed Chicken
Roasted breast of chicken loaded with fresh mozzarella, basil and marinated toasted tomatoes. Matched with orzo salad, parmesan crisps and broccoli florets. Finished with sweet pepper coulis and rosemary oil.

Soy Marinated Halibut
Pan seared and roasted. Presented with soba noodle salad and sweet and sour cucumber slaw. Enhanced with soy reduction and cilantro oil.

Tortellini Artichoke Alfredo
Incorporated with petite tomatoes, parmesan crisps and fresh basil. Available with rock shrimp.
